Peanut Butter Keto Cookie Recipe

– 1 Cup Peanut Butter – 1/2 Cup Erythritol – Large Egg

In a bowl, mix together the peanut butter, egg, and Erythritol.

Low-speed whisk until the dough comes together and gets thick. There will be a 30 to 60 second wait.

Using a cookie scoop, make dough balls and place them on a baking sheet that has been lined with silicone mat or parchment paper.

Leave two inches of room between each dough ball. Use a fork to make marks that look like a crisscross design.

Set the oven to 10 minutes. Do not move the cookies from the hot baking sheet for at least 5 minutes. Instead, move them to a cooking rack.
