Ingredients:
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plain Greek yogurt
- 1 cup milk (any variety)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Butter or cooking spray, for greasing the skillet
- Maple syrup, for serving

Instructions:
- Pulse the rolled oats in a food processor or blender until they are finely mixed into oat flour. This should take around fifteen seconds.
- Combine the oat flour, all-purpose flour, brown sugar, baking powder, baking soda, and salt in a large mixing basin. Mix until everything is well distributed. Mix thoroughly until everything is incorporated.
- To make the Greek yogurt, milk, eggs, and vanilla extract smooth and creamy, mix them together in a separate dish until they are completely combined.
- After pouring the liquid elements into the dry ingredients, give it a little mix until everything is finally incorporated. Take care not to overmix the batter, since this might cause the pancakes to become quite tough.
- It is important to avoid crushing the fresh blueberries as you gently fold them into the mixture.
- A non-stick pan or griddle should be heated over medium heat, and then it should be lightly greased with butter or water-based cooking spray.
