Chocolate Chip Drop Biscuits Recipe : These rich, buttery chocolate chip cookies are great with a cup of tea or a glass of milk. They also make a fantastic, simple baking project for you and your children.

I assumed that once Master Spice was out into the world, my baking days would be over. I had no idea that Little Miss Spice would be snooping around the cabinet to see what was baked.

She naturally insisted on playing with them. I wanted to make her an easy recipe that would allow her to use her favorite star-shaped cookie cutter, and I also needed to do it quickly. Right now, everything needs to be star-shaped.

INGREDIENTS

  • 225 g butter, at room temperature
  • 110 g caster sugar

  • 275 g plain flour
  • ½ tsp. vanilla extract
  • 40 g chocolate chips

INSTRUCTIONS

  • Heat the oven to 180°C (or 160°C if using a fan).

  • Cream the butter with a wooden spoon until it becomes soft. Once the mixture is light and fluffy, add the sugar and whisk together with a spoon.

  • Until the dough is reasonably stiff, add the flour and vanilla essence and whisk. Add the chocolate chunks and mix.

  • Roll out the dough to a thickness of about 1cm and dust the work surface and rolling pin with flour if you plan to use biscuit cutters. After cutting out the biscuits, arrange them on baking trays covered with parchment paper. Place spacers between each cookie of roughly 3 cm.

  • Freeze the baking trays for approximately fifteen minutes. This will support the cookies’ ability to maintain their shape while baking.

  • Bake for fifteen minutes or so.
  • On a wire rack, cool.

FAQs AND QUESTIONs

Can I add more chocolate to these biscuits?

  • As previously mentioned, there aren’t a ton of chocolate chips in these biscuits. After cutting out the shapes, simply push a few extra chocolate chips onto the top of the biscuits if you want to make them even more chocolaty while still using a biscuit cutter.

CAN YOU MAKE THEM VEGAN?

  • It is indeed simple to make these vegan. Simply swap out the butter for vegan spread and use vegan chocolate chips.

HOW TO MAKE THESE CHOCOLATE CHIP BISCUITS?

  • Don’t forget to look at the entire recipe card further down the page. In essence, you begin by creaming the sugar and butter together. Add the flour and vanilla after that. Take it one third at a time to make it easier to mix in.

  • You will be left with a stiff dough that you will need to work with your hands to pull together and fold in the chocolate chips.

  • After lining two baking trays with parchment paper, cut out whatever shapes you choose using a cookie cutter.

  • Bake the biscuits at 180°C (160°C fan) for approximately 15 minutes.
