Blueberry Banana Bread Recipe
INGREDIENTS

- 1 cup mashed, ripe bananas

- 1 1/2 cups fresh blueberries plus more for the top of the bread

- Preheat the oven to 350°F.
- Mix the two cups flour, baking soda, and salt together in a medium-sized bowl.
- In a large basin, combine butter and granulated sugar. Beat on medium speed with a mixer until mixture is thoroughly combined and fluffy, about 1 minute.
- Beat together the mashed banana, eggs, yogurt, and vanilla. Mix in flour mixture and beat on low speed until moistened.

- Toss the blueberries to coat after adding one spoonful of flour to a bowl.
- Mix the blueberries into the batter gently. Pour batter into a cooking spray-coated 8 1/2 x 4 1/2-inch loaf pan. For decorating, press more blueberries into the batter’s top layer.
- Once a wooden pick is inserted in the center and comes out clean, bake for 60 to 70 minutes. After letting the bread cool in the pan for ten minutes on a wire rack, take it out.
- On a wire rack, let cool fully.
